Banana and Strawberry Pancakes | Recipe

When you talk about wanting to lose weight, people expect you to spend your days and nights munching away on a certain type of food. Lettuce, tomatoes, munching away on a cucumber...all okay. Pancakes? No. You’re not supposed to eat pancakes when you want to lose weight. It’s just not the-done-thing. Thankfully, I am a fan of ignoring expectations and have sought out some healthy-but-naughty recipes to treat myself with every now and then. This is one of my favourites – best eaten fresh from the frying pan with a dollop of chocolate sauce and a sprinkling of sweetener – these pancakes will instantly make you feel virtuous with a little shade of naughty.


1 banana

40g oats (HEXB)

1 egg

5 small/medium strawberries

20ml semi-skimmed milk


You will need a blender.


  1. Blitz the oats in your blender until they are a fine powder. You may want to add the milk at this stage to make it blend easier.
  2. Add your banana, egg, and strawberries to the blender.
  3. Blitz together for around 4 minutes until it is nicely blended together.
  4. On a low/medium heat, place a frying pan with some fry-light.
  5. Fry the pancakes in small circles on a slow and gentle heat – the mixture is quite wet so it will take longer than average to dry out to a pancake-like texture.
  6. When they’re golden brown and solid to touch, take the pancakes off the heat and serve with a dollop of chocolate sauce and a sprinkle of sweetener.

If you’re following Slimming World, I calculated this came to: cooked banana (4 syns per 100g), cooked strawberries (1.5 syns per 100g), Choc Shot chocolate syrup (1/2 syn per level tea spoon), granulated sweetener (1/2 syn per level tablespoon).
